Lester's is a French-leaning raw bar and restaurant in Savannah's historic district. We believe a good neighborhood restaurant should feel essential, somewhere you return to often, not just on special occasions. Lester's is rooted in that idea, shaped by the coast, the seasons, and the people who gather here.
Seafood is at the center of what we do. Oysters, shellfish, and market-driven catch guide the menu, supported by vegetables at their peak and carefully chosen meats. The cooking is led by Chef Jacques Larson and grounded in strong fundamentals, with French technique used sparingly and purposefully to let ingredients speak for themselves.
Great food starts with exceptional ingredients. Our sourcing prioritizes quality, responsibility, and relationships with fishermen, farmers, and producers who share our standards. Chef Jacques Larson
Jacques Larson is a two-time James Beard Award nominee and the Culinary Director of Obstinate Hospitality. He came up cooking French food, where he learned the fundamentals that still guide him today. That early training shaped the way he approaches the kitchen, focused on technique, restraint, and getting the details right.
He joined the team at Wild Olive on John's Island in 2009, and went on to help open The Obstinate Daughter on Sullivan's Island in 2014, both of which helped define a more thoughtful, ingredient-driven style of cooking in the Lowcountry. Over time, his work has expanded beyond restaurants into hotels as well, including The Douglas in Savannah. Across all of these projects, Jacques has remained focused on cooking that feels honest and approachable. He's less interested in chasing trends and more interested in building menus that people come back to, food that's consistent, well-considered, and rooted in strong fundamentals.
Jacques is equally invested in the people behind the food. He believes great restaurants are built by strong teams, and he takes pride in mentoring cooks, developing leaders, and creating kitchens where collaboration and care for the craft are part of the everyday. That commitment extends beyond the kitchen through his involvement with the Lowcountry Food Bank, Charleston Wine + Food, Slow Food Charleston, and World Central Kitchen.
At Lester's, Jacques brings together years of experience with a more seafood-driven focus, centering the menu on exceptional seafood from the ACE Basin and beyond. It's the same steady approach that has shaped his work from the beginning, with French technique guiding the kitchen.
